Marui-Ito Shoten has been devoted to making quality miso since its establishment 100 years ago. We value our traditions, but at the same time embrace new technologies while continuing to study further ways to bring our customers an even better taste of home. Inside our traditional brewery, natural two-year miso and three-year miso are waiting quietly for maturation in big wooden barrels. Our pickled vegetables, such as nozawana, mountain burdock, celery, cucumbers, eggplants, ginger, daikon radishes and carrots, slowly mature in the cold storage chamber.
